Background:
You are working as a consultant to the City of Laguna Viejo. Your job is to assist the City with implementing state-mandated recycling and composting programs. As you know, all businesses are required to recycle per AB 341 and restaurants are required to recycle food scraps per AB 1826. You have identified The Cheesepie Factory as a restaurant that should have both a recycling and food scrap recycling program in place. After conducting a site visit and waste characterization on February 1, you have determined the following:
The business currently has two 4-yard bins serviced 6 days per week and has 48 cubic yards of trash per week on service. After conducting a waste characterization, you determine that 50% of what is being thrown away is recyclable (i.e. cardboard, paper, bottle, cans, etc.) and 25% is organic materials (i.e. food scraps).
The manager is interested in implementing a recycling program for dry recyclables and for food scraps, but has the following concerns:
She does not want to pay more money for trash service
She does not want less service than she currently has (i.e. less cubic yards per week of total service)
She is worried that staff will not place the materials in the proper bins
Assignment
Your job is to assist the manager with developing recommendations to implement a food scrap recycling and dry recycling service at her restaurant that addresses the three concerns of the manager listed above. Please complete the following tasks:
Fill out the following table with your service recommendations (note that the trash, recycling and organics rates for the City of Laguna Viejo are included in Table 2. I have created an automated rate calculator titled ‘Cheese Pie Calculator 03272019’ that can be found in the Week 1 module that will assist in developing this proposal table. You simply enter the number of bins and the pick-ups per week for each service line (i.e. trash, recycling, and food waste) and it automatically calculates the rates).

Draft a brief description (at least 250 words) of your recommendations to The Cheesepie Factory manager to incorporate the service levels in Table 1. Your recommendations should be a ‘sales pitch’ and should include the following components:
Cost savings realized by incorporating recycling and organics diversion services;
The proposed timeline for implementing the program;
A brief description of the compliance requirements of AB 1826 and AB 341
Why these programs are good for The Cheesepie Factory;
and anything else you feel is worth noting.
